Cinnamon and Raisin Oat Cookie

A healthier cookie thats makes a great mid-morning or lunchbox snack and is super easy to bake.
Ingredients
1 large egg
70g caster sugar
70g melted unsalted butter
1 teaspoon vanilla extract
1 tablespoon of maple syrup
100g of rolled oats
90g plain flour
1/2 teaspoon of baking powder
1/4 teaspoon salt
1 teaspoon of ground sweet cinnamon
50g raisins
Method
1. Preheat the oven to 180 degrees Celsius.
2. Line 2 baking trays with parchment paper.
3. In a large bowl, whisk the egg and sugar until light and fluffy and then add the melted butter.
4. Add the vanilla extract and maple syrup and mix until well combined.
5. Add the oats and mix with a spatula.
6. Then add the sieved flour, cinnamon, salt and baking powder.
7. Mix until combined and then add the raisins.
8. Scoop approximately 1 tablespoon size portions onto the prepared baking sheets and space out as they do spread.
9. Bake for 10-12 minutes until golden brown.
10. Leave to cool on the baking tray for 10 minutes before transferring to a cooling tray.
Notes
If you don’t like raisins, you can replace them with sultanas. Maple syrup adds something to the flavour of the cookie but you can substitute maple syrup for honey.
