Almond Biscuits

These bite size almond biscuits are a very simple recipe. Easy to make but extremely moreish.

(makes 30 small bite size biscuits)
113g ground almonds
113g sieved icing sugar
1/4 teaspoon of almond extract
2 medium egg yolks

1. Preheat the oven to 140 degrees Celsius. 

2. Line a baking tray with parchment paper.

3. In a large bowl, mix the ground almonds, icing sugar and almond extract.

4. Beat the 2 egg yolks and add to the dry ingredients. Mix until it binds together to form a dough.

5. Sprinkle icing sugar on a work surface and place the dough onto it. Gently, knead the dough (with extra icing sugar if it is sticky) to form a smooth ball. Avoid over working it.

6. Roll the dough on the icing sugar until it is 1cm thick and using a small fluted 4 cms cutter, dipped in the icing sugar, cut out 30 biscuits. 

7. Bring all the trimmings together with your hands, knead until smooth again and then re roll and cut. 

8. Place the biscuits onto a prepared tray and bake for 15-18minutes.

9. The biscuits should be light in colour and only lightly browned on the edges if you want them to be chewy. 

10. Allow to cool on the tray, as they will be soft whilst warm, then remove and dredge with icing sugar.

For chewier almond biscuits remove from the oven at 15 or 16 minutes, for a crisper biscuit leave them until 18 minutes and when they have turned a little browner. All ovens vary in temperature and practise will help establish how long these biscuits require baking in your oven and to your preferred texture. My family like them really chewy ! 

These biscuits have a rustic look, are extremely simple to make but very moreish. One is never enough .
