Mini, Brown Sugar and cinnamon doughnuts

These mini, brown sugar and cinnamon doughnuts are so yummy.
Ingredients
(makes 35 mini doughnuts)
Wet Ingredients.
125ml of milk
2 teaspoons of lemon juice (10ml)
50g melted butter/ baking spread
1 large egg beaten
1/2 teaspoon Vanilla extract
Dry ingredients.
200g plain flour
75g soft brown sugar
50g caster sugar
2 teaspoons of baking powder
1/4 teaspoon of salt
1/8 teaspoon ground nutmeg
Topping ingredients.
140g granulated sugar
1 teaspoon ground cinnamon
150g melted butter/ baking spread.
Method
1. In a bowl, mix the milk and lemon juice and let it stand for 10 minutes to make a buttermilk substitute.
2. In a medium sized bowl, mix all dry ingredients together and make sure they are well mixed.
3. Make a well in the centre of the flour mix and add the milk, melted butter and beaten egg. Using either a hand or electric whisk, whisk until a smooth batter is formed.
4. Lightly oil or grease the doughnut maker. Switch on the doughnut maker to preheat.
5. Whilst waiting for the batter to stand and doughnut maker to heat up, make the toppings. Melt the butter in a shallow bowl and in another bowl combine the cinnamon and sugar.
6. When the doughnut maker is ready, carefully spoon 1 teaspoon of batter into each
compartment. Don’t overfill as it will spill out. Try 1 teaspoon but it will depend on the size of your doughnut maker. The rule is, fill each compartment to 4/5ths of the depth.
7. The cooking process takes between 2-3 minutes per batch and I always set a timer.
8. Remove when just browned and put on a plate.
9. Refill each compartment of the doughnut maker with batter and set the timer.
10. If you can, although it becomes a military operation, as soon as the next batch is cooking, dip the cooked doughnuts into the melted butter, then roll in the cinnamon sugar. Place on a plate.
11. This batter makes 35 small doughnuts, so repeat the process until all the batter is cooked.
12. The cooking time may vary and this process gets easier once you have tried and tested it.
Notes
The full recipe is as above, here I also detail how to bake them with an electric doughnut maker. I have been making them endlessly for over a decade so the machine was a worthwhile purchase.
It is important not to overfill the compartments and to not over bake the doughnuts too. I check after 2 minutes and if they are still pale, they need a further minute.
If you do over bake, instead of just dipping in the melted butter, I let mine sit for 1 minute and they soak up the butter. Don’t let them sit in it for any longer, or they will be too soft.
Doughnut makers are available from various retailers. Giles & Posner have a 7 ring electric mini doughnut maker which is available from Amazon or Argos. Tower also produce one. They normally retail for under £25.00. My doughnut maker isn’t available any longer because it is well over a decade old. It has been used so many times, it was well worth the initial cost.
